Ingredients

  • 🍝Pasta (200g)
  • 🥑Avocado (1 ripe, peeled and pitted)
  • 🥦Green beans (150g, trimmed)
  • 🥬Spinach (100g, fresh)
  • 🍝Pesto (3 tablespoons)
  • 🥣Olive oil (1 tablespoon)
  • 🧂Salt (to taste)
  • 🧂Black pepper (to taste)

Instructions

  1. 1Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. 2While the pasta is cooking, bring a pot of water to a boil and blanch the green beans for 3-4 minutes until tender-crisp. Drain and set aside.
  3. 3In a large pan, heat olive oil over medium heat. Add the spinach and sauté until wilted, about 2 minutes.
  4. 4In a large mixing bowl, mash the avocado until smooth. Stir in the pesto, and season with salt and black pepper to taste.
  5. 5Add the cooked pasta, green beans, and sautéed spinach to the avocado pesto mixture. Toss until everything is well coated.
  6. 6Serve immediately, garnished with extra black pepper if desired.
