Ingredients
- 🍝Pasta (200g)
- 🥑Avocado (1 ripe, peeled and pitted)
- 🥦Green beans (150g, trimmed)
- 🥬Spinach (100g, fresh)
- 🍝Pesto (3 tablespoons)
- 🥣Olive oil (1 tablespoon)
- 🧂Salt (to taste)
- 🧂Black pepper (to taste)
Instructions
- 1Cook the pasta according to package instructions until al dente. Drain and set aside.
- 2While the pasta is cooking, bring a pot of water to a boil and blanch the green beans for 3-4 minutes until tender-crisp. Drain and set aside.
- 3In a large pan, heat olive oil over medium heat. Add the spinach and sauté until wilted, about 2 minutes.
- 4In a large mixing bowl, mash the avocado until smooth. Stir in the pesto, and season with salt and black pepper to taste.
- 5Add the cooked pasta, green beans, and sautéed spinach to the avocado pesto mixture. Toss until everything is well coated.
- 6Serve immediately, garnished with extra black pepper if desired.
