
Brown Rice and Quinoa Pilaf

Ingredients
- 🍚Brown rice (1 cup)
- 🍲Quinoa (1 cup)
- 🥣Olive oil (2 tablespoons)
- 🧄Garlic (2 cloves, minced)
- 🥣Vegetable broth (2 cups)
- 🧂Salt (1 teaspoon)
- 🧂Black pepper (1/2 teaspoon)
- 🥣Parsley (2 tablespoons, chopped)
Instructions
- 1Rinse the brown rice and quinoa under cold water until the water runs clear.
- 2In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- 3Add the rinsed brown rice and quinoa to the saucepan, stirring to coat with the oil and garlic.
- 4Pour in the vegetable broth, and add salt and black pepper. Stir to combine.
- 5Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the rice and quinoa are tender and the liquid is absorbed.
