Ingredients

  • 🍚Brown rice (1 cup)
  • 🍲Quinoa (1 cup)
  • 🥣Olive oil (2 tablespoons)
  • 🧄Garlic (2 cloves, minced)
  • 🥣Vegetable broth (2 cups)
  • 🧂Salt (1 teaspoon)
  • 🧂Black pepper (1/2 teaspoon)
  • 🥣Parsley (2 tablespoons, chopped)

Instructions

  1. 1Rinse the brown rice and quinoa under cold water until the water runs clear.
  2. 2In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. 3Add the rinsed brown rice and quinoa to the saucepan, stirring to coat with the oil and garlic.
  4. 4Pour in the vegetable broth, and add salt and black pepper. Stir to combine.
  5. 5Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the rice and quinoa are tender and the liquid is absorbed.
  6. 6Remove from heat and let it sit, covered, for 5 minutes.
  7. 7Fluff the pilaf with a fork and stir in chopped parsley before serving.
