Ingredients
- 🥬Lettuce (1 head, chopped)
- 🥔Potato (2 medium, diced)
- 🥦Green beans (200g, trimmed)
- 🍚Brown rice (1 cup)
- 🍅Tinned tomatoes (1 can (400g))
- 🥣Olive oil (2 tablespoons)
- 🧂Salt (to taste)
- 🧂Black pepper (to taste)
Instructions
- 1Cook the brown rice according to package instructions and set aside.
- 2In a large pan, heat olive oil over medium heat. Add diced potatoes and cook until they start to soften, about 10 minutes.
- 3Add the trimmed green beans to the pan with the potatoes and continue to cook for another 5 minutes.
- 4Pour in the tinned tomatoes, season with salt and black pepper, and let simmer for 10 minutes until the sauce thickens slightly.
- 5In a serving bowl, layer the cooked brown rice, followed by the potato and green bean tomato mixture.
- 6Top with chopped lettuce and serve warm.
